The laboratory investigates physiological aspects of bacterial populations in natural ecosystems, as a starting point in the selection of microorganisms with different capacities; such as transformation of dairy or vegetable matrices, detoxifying activity, production of bioactive compounds, or with probiotic properties (modulation of the intestinal microbiota and metabolic activities of the host). Production technologies are developed that preserve the properties of microorganisms for the design of new functional food products and/or biopharmaceuticals for humans and animals.
Some successful results were transferred to the productive sector, such as SANCOR-Bio milk, SANCOR Bio-fructans and BIOFLORA (SIDUS). Different R&D agreements are currently being developed with food and pharmaceutical companies.
